I love cupcakes and today i will make a cupcake from Magnolia bakery in New York.
Instead of Buttercream i use Angel Feather Icing, it give more shine and it taste super delicious.
Magnolia’s Bakery Vanilla Cupcakes
- 1 1/2 cups (190 grams) self-rising flour
- 1 1/4 cups (160 grams) all-purpose flour
- 1 cup (227 grams) unsalted butter, softened
- 2 cups (400 grams) white sugar
- 4 large eggs, at room temperature
- 1 cup (250 mL) milk
- 1 -2 teaspoon (5-10 mL) pure vanilla extract
Preheat oven to 350 degrees F.
In a small bowl, combine the flours and set aside, if you don’t have self-rising flour use 2 ts, baking powder
In a large bowl, on the medium speed of an electric mixer, cream the butter and sugar until smooth. and beat until fluffy, about 5 minutes
Add the eggs, 1 at a time, beating well after each addition.
Add the dry ingredients in 3 parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat and make sure the ingredients are well blended.
This recipe yield about 24 medium cupcakes.
fully spoon the batter into the cupcake liners (I use one ice-cream scoop)
Bake the Cupcakes in middle of oven until tops turn golden brown and toothpick inserted into center comes out just cleanokay)
about 18-20 minutes.
Magnolia’s Bakery Vanilla Cupcakes are at the bakery toppet with buttercream, I’am not a fan of butter cream
Instead i use Angel Feather icing on top it gives a beautifull shine to the frosting and it taste so delicious .
Angel Feather Icing
- 2 egg whites
- 3/4 cup sugar
- 1/3 cup corn syrup/ glukose
- 2 tablespoons of water
- 1/4 teaspoon lemon juice
- 1 teaspoon vanilla
Put everything but the vanilla into the top of a double boiler with a fast-boiling water below.
Start beating immediately .
with a rotary beater or electric mixer until the mixture stands in stiff peaks.
Remove from heat, add flavouring and color, and keep on beating until it is thick enough to spread easily.
I use wilton 1 M tipp to make a beautifull rose on top with the Angel Feather Icing.
Just beautifull and it taste so delicious.
